Savigny-Lès-Beaune means “land of woods,” referring to the vegetation that covered the site of this vineyard before vines were planted there. Made from grapes grown in stony, dark soils, this wine is a pure expression of Pinot Noir, with flavors of cherry, strawberry and a hint of black currant.

Fermentation
After destalking, the juice is fermented in stainless steel vats for 15-18 days. Cold maceration lasts for 5-6 days, followed by alcoholic fermentation. Gentle cap-punching is made during this period to obtain complete and perfect maceration.
Aging
Aged for 12 months in oak barrels (about 15% new) as well as in 1-2 year old barels, then stainless steel vats.
