Clos Saint-Jean is considered to be the best vineyard in Chassagne-Montrachet for Pinot Noir, and Domaine Ramonet’s sizeable parcel within it produces one of the finest expressions the grape. Bright red cherry fruit dominates a light, crisp body with mineral aromas that stem from the limestone soil, with notes of wet stone.

Fermentation
Vinification starts with maceration and fermentation in cement tanks for a short period of time (8-10 days), followed by a few days of cold maceration. Fermentation temperatures are kept low and punch-downs and pump-overs are limited, before a short period of aging in French oak barrels.
