Several small parcels from this vineyard were crushed and fermented in open top fermenters with regular pump overs; three times daily during the peak fermentation to maximize extraction. Average time on skins was 14 days after which the skins were pressed. All free run and pressings were combined and after 24 hours the wine was racked to barrel where malolactic fermentation occurred. Minimal fining and no filtration.
Length/Type of Aging: 
20 months in French oak hogsheads, 28% new, 45% in one year old with the balance being two to three years old.
