This vineyard was originally established in the areas surrounding Tournon: Mauves, Saint-Jean de Muzols and Lemps, "Mauves wines" were highly esteemed in the 19th century as far afield as Russia, even making appearances on the Tsars' dining table. During this time, two sites in particular were already well-known: Saint-Joseph hillside, a parcel of land owned today by Maison Chapoutier, and the Saint-Épine hillside.

Aroma
Mineral, flintstone (granite characteristic) and toasted aroma with hints of nuts.
Taste
The first taste is direct and round. There is a floral and honeyed finish.

The entire grapes are pressed. The must is racked by a cold decantation during from 24 to 48 hours. The temperatures of fermentation are regulated by running water.

Part of the wine is then put into oak casks (20%) while the rest remains in vats. Both wines are blended before bottling.
