Vin Santo is a traditional fortified Tuscan wine made from Malvasia and Trebbiano grapes.  Il Poggione harvests the estate grown fruit and the dries the fresh grapes on straw mats to dry in the sun.  This method, appasimiento, is a traditional Tuscan way in which to increase the sugar concentration in the grapes before they are crushed and fermented.

 

Vin Santo is a pleasant dessert wine especially suited to accompany traditional dried Tuscan desserts, such as biscotti, but makes a delicious partner for bold cheeses like gorgonzola and taleggio.

Long, slow aging (at least 5 years) in the same 100 litre barrels used for fermentation. The wine maintains contact with the "madre", a compound of yeast and bacteria residues kept from year to year which has a significant effect on the characteristics of the wine.
